Pat’s Italian Sausage Skillet

Description

My cousin Pat makes a super tasty single skillet meal that blends his Southern roots with our Southern Italian roots. Make sure to have some good crusty bread on hand to soak up all the skillet juices.


Ingredients

Scale
  • 1 lb Italian sausage links (hot, sweet or both)
  • 1012 Yukon Gold or new potatoes (small to medium size)
  • 1 large yellow, red or orange bell pepper
  • 1 medium onion
  • 810 small fresh tomatoes (Campari’s work great)
  • Salt and pepper
  • 1 teaspoon onion salt
  • 2 tablespoons olive oil
  • 1/3 cup chicken stock or broth

Instructions

  1. Cut potatoes in half
  2. Slice sausages into 5 pieces per link
  3. Cut pepper in bite size pieces
  4. Cut onion in bite size pieces
  5. Cut tomatoes into quarters
  6. Place potatoes in large bowl and mix with about 1T olive oil.
  7. Place potatoes in bottom of 9×13 baking dish (or a large cast iron skillet).  Lightly salt and pepper.
  8. Place onions and peppers in bowl and mix lightly with little olive oil. Spread over the potatoes and sprinkle lightly with onion salt and pepper.
  9. Lay sausage meat evenly across the mixture.
  10. Place tomatoes on top of sausage meat.
  11. Drizzle chicken stock/broth and a little olive oil across mixture just to add some liquid (don’t drown in liquid).
  12. Place in a preheated 350 degree oven.
  13. Stir mixture after 30 minutes and return to oven.
  14. Stir again at 30 minutes and return to oven for a final 15 minutes.
