My Grandma’s Schnecken

Description

Schnecken are a type of sweet bun that was a traditional Saturday morning treat in German homes at the beginning of the 20th century. Schnecken means “snails” in German.  My grandmother made these for every holiday gathering as a dinner roll. My family now looks forward to making these for every gathering.


Ingredients

Dough:

  • 1 cake yeast packet
  • 1 cup scalded milk
  • 1/2 tsp salt
  • 3 tbsp sugar
  • 1/3 cup butter
  • 2 beaten eggs
  • 3 1/4 cups flour

Assembly:

  • 1/2 cup melted butter 
  • 3 tbsp sugar
  • 1 cup raisins
  • 3 tbsp brown sugar
  • 2 tbsp ground cinnamon
  • 2 cups pecan halves, divided (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. Combine dough ingredients and let rise until twice its bulk (approx 2 hrs).
  3. Roll out quite thin and brush with melted butter then sprinkle with sugar, cinnamon, raisins, and pecans.
  4. Roll up and slice off in 1 inch pieces.
  5. Place 1/2 teaspoon of melted butter and 1 teaspoon of brown sugar in muffin tins before placing dough in, then bake for approx 15 minutes. Turn out immediately when done.
