Summer is the perfect time to slow cook some ribs on the grill while floating in the pool.

Ingredients
2 racks of baby back pork ribs
Dry Rub
3/4 cup packed dark brown sugar
1/2 cup smoked paprika
1/4 cup cayenne pepper
1/4 cup garlic powder
1/4 cup onion powder
2 tbs ginger powder
1/4 cup kosher salt
2 tbs ground black pepper
Bourbon BBQ Sauce
2 tablespoons finely chopped onion
1 garlic clove finely chopped
1 tablespoon olive oil
1 cup ketchup
1/4 cup brown sugar
1/4 cup bourbon
3 tablespoons cider vinegar
1/4 cup molasses
2 tablespoons Worcestershire sauce plus more to taste
1 tablespoon Dijon mustard
1 Tablespoon of Adobo Sauce
2 teaspoons of Smoked Paprika
1/2 teaspoon black pepper plus more to taste
Instructions
Prepare your ribs by removing the filmy membrane on the bone side of the rack. This tough material blocks flavor reaching the meat and will make the ribs tough. With a paring knife, start at one end of the rack and carefully peel the membrane away from the surface of the last bone. Use a paper towel to grip and remove it with one easy motion.
Combine all dry ingredients in a bowl to make your rub – brown sugar, smoked paprika, cayenne pepper, garlic powder, onion powder, ginger, salt & pepper
Cover each rack of ribs with dry rub (front and back). Refrigerate for 4-24 hours.
Heat your grill to 350 degrees (medium heat).
Take racks out of fridge and place in aluminum foil creating packets.
Place your rib packets on the grill and let cook for 1 1/2 hours. Occasionally turning over the packets.
Remove your rib packets from the grill and open 1 and test with a fork. The meat should easily pull away from the bone.
Let both packets rest for 10 mins and make your BBQ Sauce.
Make BBQ Sauce
Sauté onion and garlic in oil in a saucepan until soft, about 4 minutes. Add remaining ingredients. Bring to a simmer over medium heat; cook 8 minutes, stirring. Season with more pepper or Worcestershire sauce to taste.
Optional: Use an Immersion Blender to get a smooth consistency
Pull the ribs from the packets, baste both sides with the BBQ sauce, and add back to the medium heated grill.
Baste and turn frequently for 10-15 mins until the sauce is caramelized and charred.
