Paloma

Our nextdoor neighbor has a tree overflowing with grapefruits, and has given us free rein to pick as many as we'd like. As a result, the Paloma has become our go-to cocktail. The tart-sweet combo of the grapefruit, lime and agave make for a wonderfully refreshing drink when mixed with club soda over ice. Ingredients

  • 1/3 cup grapefruit juice (roughly 1 grapefruit)
  • 1 Tbsp lime juice (roughly 1/2 lime)
  • 1 tsp agave nectar
  • 1/3 cup club soda
  • 1/3 cup tequila
  • ice
  • grapefruit wedge garnish (optional)

Instructions

  1. Combine grapefruit juice, lime juice, agave nectar, club soda, and tequila.
  2. Stir to combine, then pour into glasses over ice.
  3. Garnish with a grapefruit wedge, if desired.


Oatmeal Spice Drop Cookies

These cookies have been a Christmas tradition in my family for as long as I can remember, with the recipe card now littered with notes from slight changes made over the years. While it may seem odd to put gummy candy in a cookie, they are a great seasonal twist on the classic oatmeal cookie - just make sure you use spice drops, not fruity gum drops, to get the right flavor. - Meghan

Ingredients

  • 1 cup butter
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 cups old fashioned oats
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 cups spice drops, cut in half (~12 ounce package)

Instructions

  1. In a stand mixer, mix the butter and both sugars until combined
  2. Mix in the eggs and vanilla, then the dry ingredients (flour, baking soda, salt, cinnamon, nutmeg, and oats)
  3. Stir in the spice drops using a spoon, then cover and chill the dough in the fridge overnight
  4. Preheat oven to 350* (convection bake at 350* is ideal)
  5. Space small scoops of dough – about 2 tablespoons each – a couple inches apart on parchment lined cookie sheets
  6. Bake for 10-13 min

Notes

Unlike fruity gumdrops, spice drops include flavors like peppermint, anise, and cinnamon. They are a more seasonal item, but I’ve had good luck tracking them down in the candy aisle at drug stores in California.

  • 3 cups sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 15oz can of pumpkin
  • 3 cups flour
  • 2 tsp cloves
  • 2 tsp cinnamon
  • 2 tsp nutmeg
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp baking powder

Instructions

  1. Preheat oven to 350°F.
  2. Beat sugar and vegetable oil in a large mixing bowl, then mix in the eggs and pumpkin.
  3. Stir half the flour into the wet ingredients until combined, add the spices, baking powder, baking soda and salt and stir to combine, then stir in the remaining flour until combined.
  4. Divide the batter between 2 floured loaf pans and bake for about an hour, until a toothpick or knife inserted into the loaves comes out clean. Once the loaves have cooled, you should be able to take them out of the pans, which makes them easier to cut and serve.

  • 2 eggs
  • 3 tbsp peanut butter
  • 1 apple, diced
  • 1 carrot, chopped
  • 3/4 tsp baking powder

Instructions

  1. Preheat over to 350°F.
  2. Mix all ingredients together.
  3. Put batter into 4 greased ramekins, cupcake holders or a muffin tin.
  4. Bake for 25 minutes.
  5. Cool completely before serving to your special pup.
